Braised Leeks Are Good Eats

I recently wrote an article for Ridgefield’s Talk of Our Town on eating with the seasons. I wanted to share this recipe with you because leeks are a great food. Leeks help to stabilize blood sugar swings and keep cholesterol levels in check. Leeks also contain kaempferol, a great cancer-fighting flavanoid.

You will need:
- 4 lb of leeks, trimmed, washed, and quartered lengthwise.
- 1 teaspoon of olive or coconut oil.
- 1 cup of veggie broth.
- 1 tablespoon of agave, honey, or natural sugar
How to make it:
- Heat the oil over medium heat in a skillet.
- Add the broth and the leeks; then cover and braise, for 10-15 minutes or until the leeks are tender.
- Cook with out the lid for about 10 minutes, or until the broth is almost gone.
- Increase the heat to high and drizzle on the sweetner.
- Cook, stirring frequently, for another 10 minutes or until the leeks are lightly caramelized.
