Johanna’s Lemon Ginger Jicama Slaw

jicamaLast weekend my wife whipped up a snack that is simple, healthy, and completely worth sahring with the world.  Jicama is mostly water and really high in fiber.  If you are concerned about packing in the calories, this is a great snack to munch, get some crunch, add some flavor and get rid of that snack attack in the evening.

You will need:

  • some jicama
  • a lemon
  • fresh ginger root

What to do:

Peel and cut the jicama into matchstick size slices.  Toss the jicama with some lemon juice in a glass or non-reactive bowl.  Freshly grate a teaspoon or two of fresh ginger on the top and mix it up.  Feel free to use the ginger and lemon juice to taste.  You can also use cinnimon, nutmeg, and other spices as you wish.

Simple. Healthy. Quick. Enjoy.

I picked up Jicama at the local Walmart or Super walmart…great!
